Get your Hot Chicken Here!!! Mild, Spicy, or Extra Hot, The views Mexican Hot Chicken is one of a kind and a recipe for all to enjoy. I love spice with a delicious flavor and my friends this has it all.

Frying temperature: 375 Degrees
I use a double fry method to achieve a perfectly cooked chicken every time

First Fry
Extra Large Breast 7-8 Minutes
Chicken Breast 5-6 Minutes
Tenderloin 2-3 Minutes

Let rest 5-6 Minutes

Second Fry Time:
Second Fry
Extra Large Breast 10-12 Minutes
Chicken Breast 9-10 Minutes
Tenderloin 2-3 Minutes

Internal Temp for Cooked Chicken
165 Degrees Fahrenheit


Potato Frying Temperature: 375 Degrees
Cook Time: 10-12 Minutes


Chicken Marinade
10 Pounds of chicken (3 Chicken Breast and 11 Tenderloins)
2 Cups of Buttermilk
1 Cup Milk (2%)
1/2 Hot Sauce (Frank’s Red Hot)
1/2 Tablespoon Chicken Bouillon
1 Tablespoon Paprika

Extra Spicy add 1 Teaspoon Cayenne Pepper or Hungarian Paprika (Adjust spice to taste)

Flour Seasoning Blend
3 1/2 Cup AP Flour
1/4 Cup Corn Starch
1/2 Cup Rice Flour
1 Tablespoon Mexican Seasoning Blend (Optional)
*Save some seasoning from the Views Spicy Chili Oil Blend

If you are making a lot of chicken make 2 Portions

Recipe Ingredients
1-2 Cups Oil (Canola)
3-Chiles Puya
3-Chiles Arbol
1- Tablespoon Chiltepines Or your choice of pepper Flakes
3- Dried Chipotle Peppers
1/2- Tablespoon Mexican Oregano
2- Medium Ground Bay Leaves
1/2-Tablespoon Ground Cumin
1/2-Tablespoon Chicken Bouillon
1/2-Teaspoon Salt
1-Teaspoon Onion Powder
1-Teaspoon Garlic Powder
1/2-Teaspoon Black Pepper
1/2-Teaspoon White Pepper
1-Teaspoon Paprika
1/2-Teaspoon News Mexico Red Chili Powder (The supper XXX HOT Charlene)
1-Teaspoon Lemon Pepper
1/2-Teaspoon Ginger Powder
1/4-Teaspoon Brown Sugar
1/4-Teaspoon White Sugar
*If you don’t have the XXX Hot Charlene Chili powder use 1/2 Teaspoon Cheyanne Pepper
*If you want to reach an even more flavorful spice in your oil add 1/2 Teaspoon Cheyanne Pepper, and extra TBS of Chiltepines, and 1/2 TBS of dried Habanero Powder

*Please adjust the spice level to your liking by adding a little Cayenne pepper at a time

-This recipe doesn't last long in my home. As far as how long it will keep will depend if you used fresh oil or infused oil. To be on the safe side refrigerate chili.
-Chili Oil taste best the next day

Fried Potatoes
8-10 Potatoes
3/4 Cup Corn Starch
1/3 Cup Ap Flour
1/2 Teaspoon White Pepper or Black Pepper
1/2 Teaspoon Salt
